The “phantom sake rice” Kinmon-Nishiki was developed in 1956 and once used widely across Nagano breweries. However, due to difficulties in cultivation and polishing, it gradually disappeared, remaining only in Kijimadaira village. Driven by the desire to craft distinctive local sake, improvements in cultivation and quality led to its revival in 2004. Today, it is once again used by breweries in Nagano, marking the comeback of Shinshu’s legendary rice. Sake brewed with Kinmon-Nishiki is characterized by complex aromas and rich umami, spreading in the mouth before coming together in a refined, intriguing finish, making it highly regarded among connoisseurs.
