Through years of collaboration between Daishinsyu’s contracted farmers and the brewery, an organic farming method without pesticides has been cultivated. From the carefully grown Kinmon-Nishiki rice, only the finest grains are selected and polished down to 40%. The brewing process is carried out with the utmost care, just as for competition-grade sake. The finished sake is pasteurized without filtration and matured in bottles. The aroma carries both elegance and calmness, gradually spreading with a gentle impression. Thanks to bottle aging, the texture is slightly viscous, and the flavor expands harmoniously with the fragrance, leaving a pleasant aftertaste that fades smoothly.
