A Junmai Daiginjo of the highest polishing grade, crafted from locally and meticulously cultivated Yamada Nishiki rice. It features a palate where sophisticated sweetness and umami unfold gracefully in the mouth.
The brewing process utilizes the classic "Yeast No. 9" from the Brewing Society of Japan and employs the traditional "Kimoto-shikomi" method. The refreshing character inherent to the Kimoto style and the pristine umami are kept in magnificent balance. It is at its absolute best when served as "Nurukan" (lukewarm).
