We began our journey with the traditional "Kimoto-shikomi" method in 2015 (Heisei 27). Two years of aging have developed a mellow umami and a distinctive acidity that beautifully enhances the flavors of your meal. It pairs exceptionally well with hot pot dishes (Nabe)! We highly recommend enjoying this sake at room temperature or warmed.
