Ikinokura (壱岐の蔵)
Established in 1984 by the merging of six historical distilleries on Iki Island, Nagasaki, Ikinokura Distillery is a guardian of the birthplace of barley shochu. Honoring a 500-year-old tradition, the distillery uses a unique ratio of two-parts barley to one-part rice koji, blending the roasty aroma of barley with the natural sweetness of rice. This craftsmanship is recognized worldwide through the Geographical Indication (GI) status. By combining mineral-rich water from basalt layers 130 meters underground with modern techniques like vacuum distillation and barrel aging, Ikinokura crafts the "ultimate food-pairing shochu," aiming to share Iki's premium spirits with the world.
