Matsui Sake Brewery (松浦酒造店)
Founded in 1726 in Kyoto, Matsui Sake Brewery is the city's oldest continuously operating brewery. Using soft groundwater from Mt. Hiei, the owner-brewer leads a small team to create sakes emphasizing rice's essence through complex sweet-sour-bitter balance, honoring three centuries of artisanal tradition.
