For this Daiginjo, we meticulously select Yamada Nishiki and Gohyakumangoku rice, polishing them to 45%. It is brewed with entirely handmade koji and "Raiden-sama no Shimizu"—the pristine spring water born from the melting snows of Mount Hakkai.
