Founded in 1897 in Joetsu, Niigata, Maruyama Brewing inherits traditional handmade koji techniques. Located in a premium sake rice region, they meticulously adjust soaking/steaming for each rice variety. Using satoyama soft water and winter snow, they craft refined, clean sakes representing the Kubiki Toji school's legacy.
