Yamada Shuzo (山田酒造)
山田酒造は1871年、愛知県蟹江町で創業。木曽川水系の恵まれた土地で150年以上の歴史を持つ。山卸廃止酛という伝統技法を守り、約1か月かけてじっくり醸造。酵母の働きをゆっくりと促し、米の旨味を広げた独特の香りとコクのある味わいを追求。歴史と革新が共存する蔵元。
