Kamoizumi Shuzo Co. (賀茂泉酒造)
Founded in 1912 in Saijo, Hiroshima—one of Japan’s three premier sake-brewing regions—Kamoizumi Shuzo is a historic pioneer of the "Junmai Revival." In the early 1970s, it was one of the first breweries to return to the traditional roots of brewing sake using only rice and water, without added alcohol. Known for its "soft water brewing" technique, Kamoizumi sakes are characterized by a rich, full-bodied Umami and a distinctive, slightly golden hue, a result of their commitment to minimal carbon filtration.
