Presenting a masterful Imo Shochu from Nishi Shuzo, crafted entirely from 100% Ayamurasaki sweet potatoes using the rigorous Imo-koji Zenryo technique! Made exclusively with the "Ayamurasaki" variety—renowned for its wine-like bouquet—this shochu offers distinct aromatic notes of yogurt and sun-dried raisins. Upon the first sip, a complex sweetness unfolds, gracefully transitioning into a floral and mellow finish. The "Imo-koji Zenryo" process (using sweet potato koji instead of rice koji) allows the pure, intense sweetness and the gentle, comforting umami of the potato to spread softly across the palate. It pairs exceptionally well on the rocks! It is also highly compatible with a splash of water or mixed with tonic water.
