About The Brewery
Nashide Shuzo (名手酒造)
From the 1990s through the following decade, we focused on crafting "authentic sake for everyday life," which was met with great acclaim. During this period, our growth reached the maximum capacity of our then-existing facilities while still maintaining quality. Since around 2000, our total shipment volume—including Junmai sake for liqueurs and exports—remained stable for over ten years.
Furthermore, we maintain a shipment ratio of over 60% within Wakayama Prefecture, earning us recognition as a leading local brewery centered on Junmai sake. Our brewing water is relatively hard, providing robust fermenting power that results in a sake profile with depth, softness, rich Umami, and a satisfying body. While we strive to secure premium rice, hone our brewers' skills, and improve our facilities, our fundamental philosophy remains brewing in harmony with our local climate and cherishing the unique character of our brewery.
