This sake is made using "Yume no Ka," a variety of rice suitable for brewing sake. We also produce this rice jointly with local farmers in the Aizu region. It is a sake rice variety specifically developed by the prefecture to suit the climate, terroir, and natural environment of Fukushima. It possesses a subtle, understated nose that hints at sweetness. Upon tasting, fresh fruit-like aromas spread across the palate, allowing you to savor the inherent umami and richness of the rice. The finish features a faint acidity that tightens the flavor profile, resulting in a sharp, clean cut (kire). It is a classic, refreshing Junmai sake.
