The brewery is a staunch advocate of "Junmai-only" brewing and the art of "Long-term Aging." Believing that the true character of sake unfolds with time, most of their releases are matured for at least two years, resulting in a profound Umami and a mellow, complex profile. As a specialist in "Food-Pairing Sake," Chikusen is particularly celebrated for its excellence when served warm (Kanzake).
