採用｢清酒釀造清酒｣的特殊技術釀造（在三段釀製(三段仕込み)後，在「留添」時加入純米酒而不是仕込水）。從一開始酒精含量已是大約10%，在這個環境中酒酵母會產生更多的蘋果酸，所以酒中的甜度來自過程中控制發酵時間保留米中的醣份。其酒質特點是順滑、複雜、深沉的甜味並以柔軟的酸度平衡。
