Brewing Smiles Through Our Craft

The thing we cherish most in our brewing is "brewing smiles for everyone connected to Tenryohai Shuzo." Exquisite sake makes the heart sparkle. Therefore, with every batch, we strive to pursue the essence of "deliciousness"—even by a mere 1mm—aiming to surpass the threshold where the heart begins to radiate.If we compromise even slightly, we can never exceed our limits. No matter how much time or labor is required, 
if it leads to a superior sake, we will commit ourselves entirely. This is our unyielding pursuit of quality in brewing.There are many challenging moments. Honestly, there are times we think, "it could be so much easier." But the moment we see a smile on someone's face, all the hardships vanish instantly.And then, the bar is raised once again... I often believe that our true masterpiece is always our next creation. There is no "final form" for our sake; we simply continue to brew wholeheartedly, never losing our spirit of challenge.
If we can create smiles for the people who drink our sake, the retailers who sell it, and the staff who work alongside us, that is true happiness.

Many Challenges, Many Failures, Small Successes

At Tenryohai Shuzo, the recipe and temperature progression of every single batch we brew is unique. Since 2019, no two brewing processes have ever been identical. One might call this a bold spirit of challenge; others might see it as total instability.However, there is one common thread that weaves through every one of these attempts: Every challenge is "a theoretical pursuit aimed at the possibility of greater deliciousness." "The last batch tasted like this—so, what if we changed this element? Could it become even better?" With that, we say: "Let's try it."

In today’s world, the market—sake included—is flooded with "new releases," "novel ingredients," and "trendy brewing methods." These exist simply because they create buzz and drive sales. Yet, after the initial flash-in-the-pan excitement, the focus inevitably shifts to the next new thing in an endless cycle.
What we aspire to brew—and what we wish to deliver to you—is not a "trendy sake," but a "refined and truly exquisite sake." To that end, we relentlessly pursue quality every day, embracing countless challenges in the process.
