Crafted using the newly developed Kyoto yeast "Kyo-no-Koi" and local "Iwai" sake rice, this is a "100% Kyoto" Junmai sake.
By breaking away from traditional constraints, we have tailored our brewing process to perfectly complement this unique yeast. The "Yondan-shikomi" (four-stage mashing) process and its Genshu (undiluted) nature provide a robust body with rich rice umami and sweetness. This is beautifully balanced by a long-term, ultra-low temperature fermentation, which imparts a clear aroma and a refreshing finish.
This sake is completely unfiltered; depending on the bottling timing, natural rice sediments may remain within the bottle. In its Namazake (unpasteurized) form, the lively energy of active yeast is transmitted directly to the palate. Note: This is a new type of Junmai sake developed in collaboration with the Kyoto Municipal Institute of Industrial Technology and Culture.
