The Kamo Nishiki Nifudazake Misatonishiki Junmai Daiginjo masterfully showcases the exceptional traits of "Misatonishiki"—a rare pedigree rice inheriting the deep umami of Yamada Nishiki and the sharp, clean bone structure of Miyama Nishiki. The nose opens with a highly refined bouquet of fresh citrus, white peach, and subtle European pear, leading into a palate defined by a taut, elegant contour and hyper-translucent rice sweetness. This structured body is brilliantly focused and lifted by Nifudazake's signature lively micro-effervescence and crisp, refreshing acidity, culminating in a razor-sharp finish. A fluid and contemporary expression, it pairs spectacularly with white-fish sashimi, salt-grilled river fish, or delicate French amuse-bouches.

About The Brewery

Kamonishiki Co (加茂錦酒造)

Founded in 1893 in the snowy realm of Niigata, Kiku Nishiki Shuzo historically operated in a region synonymous with bone-dry, traditional "Tanrei Karakuchi" sakes. However, under the leadership of Yuichiro Tanaka—a genius master brewer who achieved legendary status in his early 20s—the brewery boldly rewrote the rules. Launching the iconic "Nifudazake" (Shipping Tag) series, featuring a minimalist, raw cardboard tag as its label, Kamo Nishiki instantly took the global Gen-Z and contemporary sake connoisseur circles by storm, becoming a premier vanguard of modern craft sake.
