Founded in 1893 in the snowy realm of Niigata, Kiku Nishiki Shuzo historically operated in a region synonymous with bone-dry, traditional "Tanrei Karakuchi" sakes. However, under the leadership of Yuichiro Tanaka—a genius master brewer who achieved legendary status in his early 20s—the brewery boldly rewrote the rules.
