Rooted in the lineage of Nara’s indigenous "Tsuyuhakaze" rice, the "Nana Tsuyu" variety is a perfect manifestation of the Nara Basin’s unique climate and soil. Characterized by its plump grains and brilliant white heart (shinpaku), it is exceptionally suited for artisanal brewing. Kaze no Mori purposefully polished this rice to 65%—matching the benchmark of "Akitsucho 657"—to launch "Kaze no Mori Nana Tsuyu 657."
Exhibiting greater solubility than Akitsucho, this rice delivers a lush bouquet of strawberries and floral notes, defined by a rich, honeyed sweetness and beautifully balanced acidity.
