Crafted with organically grown Kinmon-Nishiki rice from Daishinsyu’s contracted farmers, polished to 40%, and brewed with the same meticulous care as competition-grade sake. The unfiltered sake is pasteurized and matured in bottles. “Shinju” is a rare release, bottled only from the finest nakadori portion of the year’s Junmai Daiginjo class, with the most harmoniously balanced expression chosen as Shinju.
