The Story

A Toast to the Spirit of the Land

The name "Banshu Ikkon" carries a heartfelt invitation: "Please enjoy a cup of our sake, brimming with the essence of Banshu." Using premium rice harvested from the legendary Banshu region and pure sub-surface water from the Mt. Hyono range, the brewery harnesses the region's distinct climate of sharp temperature swings. Every drop is a meticulous concentration of Banshu’s mountains, flowing waters, and the brewer’s soul—a pure tribute to the land and the connoisseur alike.

The Sake

Crafting the "One More Glass" Experience

Sanyo Hai Shuzo focuses not on a fleeting first impression, but on a "Shokuchushu" (food-pairing sake) that brings smiles to the table. Their ideal flavor combines a robust Umami with a balanced acidity that leads to a sharp, clean finish (Kire), naturally inviting "one more glass." Rather than overshadowing the cuisine, Banshu Ikkon harmonizes with every dish. By blending traditional and modern techniques, they strive to brew a sake that colors the dining experience and sparks genuine joy.

The Sake

Guardians of Sake’s 1,300 Year Birthplace

According to the Harima no Kuni Fudoki compiled 1,300 years ago, Niwata Shrine in Shiso City, Hyogo, is regarded as the birthplace of Japanese sake—marking the oldest recorded mention of brewing using Koji. As the brewery closest to this sacred site, Sanyo Hai Shuzo carries the weight of this millennial heritage. While honoring ancient wisdom, they fearlessly innovate, transforming the glory of their origins into a modern standard of excellence. Within every glass lies a miracle of brewing that transcends time.
