The Story

Brewing that Begins in the Soil

Without rice, Japanese sake simply cannot exist.

That is why we believe the first step in sake brewing is nurturing the partnership with our 40 contract farmers. From spring through summer, our brewers (Kurabito) head to the fields to learn the art of rice cultivation directly from the farmers. During the autumn harvest, the entire brewing team joins in the fields. We make it a priority to visit even our most distant farmers at least once a year, actively cherishing these "connections."

Furthermore, we invite our farmers to join us in the brewery as fellow craftsmen. By merging our visions and dedication, we elevate the act of "growing rice" into the art of "brewing sake." By feeling the earth, learning from the soil, and honoring human emotion, our sake is crafted hand-in-hand, heart-to-heart.

The Sake

The Masterful Balance of the Eternal and the Evolving

This is the profound philosophy attained by the legendary Haiku master, Matsuo Basho. It posits that in this world, there are things that must remain absolute and never change ("Fueki" — Immutability), and things that must adapt and evolve with the times ("Ryuko" — Fluidity).

Fueki (Constancy):
Represents the core essence, the unwavering commitment to quality, and the timeless soul of the craft that must be preserved at all costs.

Ryuko (Fashion):
Represents the flexibility to respond to shifting trends, evolving tastes, and technological advancements to remain relevant.

To truly understand "Fueki Ryuko" is to embrace both. Only by honoring the eternal while courageously pursuing the new can a tradition continue to flourish across generations.
