Brewed using a modern "Yamahai" method, this sake offers a gentle, elegant fruity aroma complemented by subtle grassy undertones. It features a clean, refreshing finish with a well-balanced acidity. Thanks to careful low-temperature aging within the brewery, the mouthfeel is incredibly mellow and smooth, making it a versatile companion that pairs beautifully with a wide range of cuisines.

About The Brewery

Ichinoya Co. (株式会社市野屋)

The rice is selected from the best rice producers each year, and the water is pure from the beautiful soil. After the "ingredients" for sake are gathered at our brewery, human hands and sensitivity come to life. Rice polishing, washing, steaming, koji making, and sake mother yeast starter making. Sake mash, brewing, filtration, hi-ire, and storage. The brewer's handiwork is used in every step of the process, and the Toji's sensibility creates the one and only sake. Sake brewing with water, rice, and human hands. Respect for the wisdom of our predecessors and trust in the sensitivity of the Toji and brewers of today. This is the essence of Ichinoya's sake brewing.
