Located in Ishinomaki City, Miyagi Prefecture, Hiraka Shuzo has flourished alongside this "City of Water" since its founding in 1861. Situated at the mouth of the majestic Kitakami River, Ishinomaki is a world-renowned fishing port and a historic trade hub. By drawing on the river's pristine sub-surface water, Hiraka Shuzo fuses the bold spirit of a port town with the refined craftsmanship of the late Edo period. This creates a sake with a sturdy structure and a crystal-clear finish—the cornerstone of their century-and-a-half legacy.

The flagship brand "Hinakami" takes its name from an ancient, poetic term for the Kitakami River basin. Under the vision of 5th-generation head Mr. Hirai, the brewery established its soul as "Sake crafted for sushi and seafood." While others chased flamboyant aromas and sweetness, Hinakami stayed true to its pursuit of "Kire" (a sharp, clean finish) and balanced acidity. Instead of overshadowing the meal, it acts as the ultimate supporting character, cleansing the palate and amplifying the Umami of the fish—earning it a permanent place in Japan’s top sushi establishments.
