Crafting a Superior Suigei
Tosa-gura was established in 2018 (Heisei 30), fully equipped with the latest brewing technology. By implementing in-house milling, we meticulously assess the condition of our raw brown rice before processing, ensuring the optimal polishing ratio for every grain.Beyond rigorous temperature control, we have integrated advanced dehumidification systems to manage humidity, creating the ultimate environment for fermentation. We adhere to a "small-batch" philosophy, allowing for the most meticulous and attentive management of the moromi (mash).
This small-batch approach enables "Fresh Rotation" shipping, ensuring that every bottle reaches you in its peak, most vibrant condition. Furthermore, the brewery’s layout is strategically designed to streamline the workflow, allowing freshly bottled sake to be moved immediately into cold storage to preserve its crisp, fresh flavor.
The Sake
The Core of Brewing: Precision in Rice Hydration
The key to exceptional brewing lies in one crucial factor: precisely controlling how much water the rice absorbs.
At Tosa-gura, we source our sake-brewing rice (Shuzo-kotekimai) in its unpolished brown rice state. Even within the same variety, rice characteristics shift depending on its origin. Since the initial condition of the brown rice dictates the optimal milling parameters, it is essential for us to assess the grain with our own eyes and manage the entire milling process in-house.
Our greatest strength lies in this "100% In-house Milling" approach. Immediately after polishing, the rice is stored in a climate-controlled environment where temperature and humidity are perfectly regulated. This allows us to strategically adjust the resting period before the rice enters the mash, ensuring that only the finest grains, in their absolute prime condition, are delivered to the brewing stage.
The Sake
A Legacy of Expansion and Specialization
In August 2018, Tosa-gura was established in Kohara, Tosa City—approximately 20 kilometers west of Suigei’s main Nagahama brewery in Kochi City. This state-of-the-art facility was born from necessity; as global demand for Suigei continued to soar, the original Nagahama brewery reached its production capacity, prompting the construction of this new hub.
Tosa-gura is nestled within a pristine mountain landscape, situated near the Niyodo River—a waterway celebrated for its exceptional purity. This untouched natural setting provides the perfect environment for crafting premium sake. The brewery’s greatest strength is its fully integrated production line, managing every stage from rice milling to bottling in-house. Today, Tosa-gura is dedicated specifically to the production of high-end Junmai Ginjo and Junmai Daiginjo.
