Sake is a "magical liquid" that draws people closer together.
Heavens know how many times we’ve made cringeworthy blunders while drinking—the kind you just want to hide your face in shame from.
Yet, it’s the memory of those joyful times that brings us back to share another glass.
Whether in times of sorrow or hardship, I want our sake to be a presence that stands by you, offering comfort and companionship.
The Sake
Have fun, but stay serious.
I have zero interest in the kind of brewing that involves frowning and nitpicking over every tiny detail. We are simply facilitators, here to assist the biological activities of the microbes that have coexisted with humanity through the ages.
Work is a means to achieve a rich and fulfilling life.
But if we’re spending eight hours a day on it, those hours might as well be enjoyable, don’t you think?
Enough of that gloomy, oppressive brewing atmosphere. We work together with smiles on our faces. Inside our brewery, the staff takes turns playing their favorite music every day, letting the rhythm guide our craft.
The Sake
The Last-Ditch Effort: The Birth of the "Yamamoto" Brand
Since our founding, we represented ourselves through the brand "Shirafuji," named after the waterfall behind the brewery. By 2007, however, we were on the verge of bankruptcy. Determined to turn the tide, the successor, Yamamoto, abolished the traditional Toji (Master Brewer) system and took the helm himself.
In that first year of brewing with his back against the wall, a "miraculous" Junmai Ginjo was born. Following the advice of a local liquor shop owner, the "Yamamoto" brand was officially launched, marking a new era of excellence.
Sake for the Stories: Don’t Drink with Your Head; Drink with Your Heart
Typical sake labels are cluttered with minute details—rice varieties, yeast strains, Sake Meter Value (SMV), acidity, and even amino acid levels.
Our philosophy is simple: "Don't drink sake with your head. Drink it with your heart." Sake is meant to be experienced, not analyzed.
