Niida Honke (仁井田本家)

仁井田本家は1711年、福島県郡山市で創業。1967年に日本初の自然酒を発表し、300周年を機に100%天然米・純米の「全自然米醸造所」へ回帰。酵母添加せず蔵付き酵母と乳酸菌で発酵。自社山の杉と竹で桶を製作し、土壌の個性が反映された自然酒を追求する。
